Oceania introduces pastry training program for onboard chefs

Oceania Cruises has introduced a new multi-year training initiative for its onboard pastry and bakery chefs, developed in partnership with digital training platform The Butter Book.

The program, called The Floating Pastry Academy, will see more than 200 chefs complete a three-year curriculum combining online learning with practical assessments conducted onboard.

According to the cruise line, the academy is designed to provide a more structured approach to pastry and baking training at sea, with defined learning pathways, role-based progression and certification at each stage.

“This new academy reflects the respect we share for the traditions that shaped us, and for a passion for culinary excellence at sea. Culinary excellence starts with our people, and this new program will reinforce the consistency, refinement and artistic precision our pâtisserie demands, while nurturing the professional growth of our chefs,” said chef Eric Barale, Oceania Cruises’ executive culinary director.

“Investing in your people is essential to sustaining luxury,” added chef Sébastien Canonne, founder of The Butter Book and a Meilleur Ouvrier de France. “This academy creates a model designed for enduring excellence and innovation, supporting the fleet’s growth without compromising on technique or quality.”

The training program includes mandatory foundational courses for new team members, specialized tracks based on role and chef-led digital modules supported by quizzes and hands-on assessments.

The initiative is part of Oceania's broader focus on culinary programming, which also includes the upcoming debut of La Table par Maîtres Cuisiniers de France, a restaurant concept set to launch aboard Oceania Sonata in 2027.

Oceania Sonata, the line’s ninth ship and the first in a new class of vessels, is scheduled to enter service in August 2027.
